Lemon Bars

Ingredients
  

  • 1 cup almonds
  • cups dates
  • 1 tbsp pure vanilla extract
  • 1 lemon zest and juice
  • ¾ tsp sea salt

Instructions
 

  • Soak the dates in warm water for a few minutes. Especially in this recipe, soaking the dates will make everything much easier.
  • Zest and juice the lemon.
  • Process the almonds to a fine powder.
  • Place them in a bowl and set it aside.
  • Process all other ingredients in the food processor until there are no large pieces of dates.
  • Add the ground almonds and pulse until incorporated.
  • Transfer to a small baking sheet and place it in the refrigerator or the freezer to set.
  • Once it's set, cut it and enjoy!
