Soak the dates in warm water for a few minutes. Especially in this recipe, soaking the dates will make everything much easier.
Zest and juice the lemon.
Process the almonds to a fine powder.
Place them in a bowl and set it aside.
Process all other ingredients in the food processor until there are no large pieces of dates.
Add the ground almonds and pulse until incorporated.
Transfer to a small baking sheet and place it in the refrigerator or the freezer to set.
Once it's set, cut it and enjoy!
